  • 2 teaspoons minced garlic
  • 23 tablespoons lemon juice
  • 2 teaspoons apple vinegar
  • 2 tablespoons olive oil
  • 3 tablespoons plain Greek yogurt
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • 1 medium cucumber (for tzatziki)
  • Pita bread
  • Fresh vegetables (tomatoes, red onion)
  • Feta cheese

Instructions

  1. Marinate the Beef: In a large bowl, whisk minced garlic, lemon juice, apple vinegar, olive oil, Greek yogurt, oregano, salt, and pepper. Add beef and coat well. Cover and refrigerate for one hour.
  2. Prepare Tzatziki Sauce: Shred cucumber; sprinkle with salt and drain excess moisture. In a bowl, mix drained cucumber with Greek yogurt, lemon juice, dill, garlic, white grape juice vinegar, salt, and pepper. Refrigerate for at least 30 minutes.
  3. Cook the Beef: Preheat oven to 400°F or grill on medium-high heat until beef reaches an internal temperature of 140°F (about 12-18 minutes oven or 8-10 minutes grilling). Let rest before slicing.
  4. Assemble Gyros: Serve sliced beef in pita bread topped with tzatziki sauce, feta cheese cubes, chopped tomatoes, and sliced red onion.
