  • 1 cup canned pumpkin puree
  • 1 ½ cups all-purpose flour
  • 2 large eggs
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp ground cloves
  • ¼ cup granulated sugar for filling
  • 1 egg yolk for filling
  • ½ tsp pure vanilla extract for filling
  • 8 oz cream cheese (softened) for frosting
  • ½ cup unsalted butter (softened) for frosting
  • 34 cups powdered sugar (sifted) for frosting
  • 1 ½ tsp pure vanilla extract for frosting
  • 1/8 tsp salt for frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Prepare the cream cheese filling by beating together softened cream cheese, granulated sugar, egg yolk, and vanilla extract until smooth.
  3. In a large bowl, whisk together flour, baking soda, salt, and spices.
  4. In another bowl, mix granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth.
  5. Fold the dry ingredients into the wet mixture gently until just combined.
  6. Fill each muffin liner halfway with batter, add cream cheese filling in the center, then cover with more batter until three-fourths full.
  7. Bake for 18–22 minutes or until a toothpick inserted comes out clean.
  8. In another bowl, beat together softened cream cheese and softened butter until light and fluffy. Gradually add sifted powdered sugar, mixing well. Stir in vanilla and salt, then continue whipping until fluffy.
  9. Spread or pipe frosting onto completely cooled muffins before serving.
