  • 2 1/2 lb. Brussels sprouts
  • 1/3 cup olive oil
  • 1/3 cup honey
  • 1/3 cup balsamic vinegar
  • 1 Tbsp. Dijon mustard
  • 2 cloves garlic, minced
  • 3 Tbsp. unsalted butter
  • 1 1/2 tsp. kosher salt, divided
  • green onions
  • lemon zest

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet.
  2. Trim the ends of the Brussels sprouts and cut each in half, discarding any loose leaves.
  3. In a large mixing bowl, toss halved Brussels sprouts with olive oil and 1 teaspoon of kosher salt until evenly coated.
  4. Arrange the coated sprouts cut side down on the baking sheet and roast for about 20 minutes until golden brown.
  5. While roasting, heat honey in a saucepan until bubbling; then stir in balsamic vinegar, Dijon mustard, minced garlic, and remaining salt.
  6. Return to medium-low heat and add unsalted butter; cook until the sauce thickens (about 5 minutes).
  7. Toss the roasted Brussels sprouts with the glaze or serve it on the side. Garnish with lemon zest and green onions if desired.
