  • 1/4 cup oyster sauce
  • 2 tablespoons ketchup
  • 2 tablespoons honey
  • 2 tablespoons chili garlic sauce
  • 1 tablespoon Dijon mustard
  • 3 cloves garlic, minced
  • 2 teaspoons fresh ginger, grated
  • 2 pounds boneless, skinless chicken thighs, cut into chunks
  • Canola oil for brushing
  • Kosher salt and freshly ground black pepper

Instructions

  1. In a medium bowl, mix together oyster sauce, ketchup, honey, chili garlic sauce, Dijon mustard, garlic, ginger, and water. Reserve 1/3 cup for later.
  2. Combine the remaining marinade with chicken in a Ziploc bag or bowl. Marinate in the refrigerator for 2 hours or overnight.
  3. Preheat grill to medium heat (about 350°F). Drain excess marinade from chicken.
  4. Thread chicken onto skewers without overcrowding. Brush with canola oil and season with salt and pepper.
  5. Grill skewers for about 10 minutes total, turning occasionally until the internal temperature reaches 165°F. Baste with reserved marinade during the last few minutes.
  6. Serve hot and garnish with sliced green onions and toasted sesame seeds if desired.
