  • 2 large chicken breasts (cut into 1-inch pieces)
  • ½ teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 can (15 ounces) diced tomatoes (undrained)
  • 2 cups water
  • 12 ounces uncooked penne pasta
  • 4 plum tomatoes (diced)
  • 1 small red onion (diced)
  • 3 cloves garlic (minced)
  • ½ cup grated parmesan cheese
  • ½ cup chopped fresh basil
  • 1 tablespoon lemon juice

Instructions

  1. In a mixing bowl, combine diced plum tomatoes, red onion, minced garlic, chopped basil, lemon juice, salt, and pepper to create the bruschetta topping. Set aside.
  2. Add chicken pieces, Italian seasoning, salt, pepper, olive oil, and undrained diced tomatoes to the Instant Pot. Mix thoroughly.
  3. Layer uncooked penne pasta on top of the chicken mixture and pour in enough water to cover or almost cover the pasta.
  4. Secure the lid of the Instant Pot and set to pressure cook on high for 3 minutes. The pot will take about 10 minutes to come to pressure before cooking begins.
  5. After cooking is complete, quickly release steam and carefully remove the lid. Stir well until pasta absorbs most of the water.
  6. Fold in grated parmesan cheese and bruschetta topping mixture into the pot. Cover with a lid and let sit for an additional 5 minutes before serving.
