  • 6 medium bell peppers (any color)
  • 1 Tbsp olive oil
  • 1 cup green onion, diced (divided)
  • 23 cloves garlic, minced (divided)
  • 1 ¼ lb lean ground beef
  • 1 tsp Italian seasoning
  • 1 tsp steak seasoning
  • 1 ½ tsp onion powder
  • 2 cups cooked rice
  • 2 cups diced tomatoes
  • 2 Tbsp chopped basil (thyme and parsley)
  • Optional: 1/3 cup mozzarella cheese for topping

Instructions

  1. Prepare the peppers by cutting off the tops and removing the seeds. Set aside.
  2. In the Instant Pot, heat olive oil using the 'Sauté' setting. Sauté half of the green onions and garlic until fragrant.
  3. Add ground beef along with seasonings; cook until browned.
  4. Mix in cooked rice and stuff each pepper with the filling.
  5. For the sauce, sauté remaining onions and garlic, add diced tomatoes and herbs; simmer briefly.
  6. Place stuffed peppers in sauce, lock lid, seal vent, and pressure cook for 10 minutes.
  7. Release pressure carefully, sprinkle cheese on top of peppers, close lid to melt cheese.
  8. Serve hot with extra sauce drizzled on top.
