  • 1 tablespoon olive oil
  • 1 medium onion (diced)
  • 2 large carrots (diced)
  • 2 stalks celery (diced)
  • 3 cloves garlic (minced)
  • 6 cups beef broth
  • 1 15-ounce can tomato sauce
  • 1 15-ounce can crushed tomatoes (undrained)
  • 1 teaspoon Italian seasoning
  • 1 cup dry short-cut pasta
  • ¼ cup fresh parsley (chopped)
  • Freshly grated parmesan (for serving, optional)

Instructions

  1. Preheat your oven's broiler and lightly grease a baking sheet.
  2. In a large mixing bowl, combine ground beef, minced garlic, beaten egg, breadcrumbs, Italian seasoning, salt, and pepper until well mixed. Form into meatballs and place on the prepared baking sheet.
  3. Broil meatballs for 6-7 minutes until browned but not fully cooked.
