  • 1 head iceberg lettuce
  • ½ head romaine lettuce
  • 3.5oz / 100g fresh mozzarella ball or shredded mozzarella cheese
  • 15oz / 425g can of garbanzo beans / chickpeas – drained
  • 6 pieces of sun-dried tomatoes
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons apple vinegar
  • 2 teaspoons dijon mustard
  • 12 teaspoons honey
  • ¼ cup finely grated parmesan cheese or pecorino romano cheese
  • Salt and black pepper to taste

Instructions

  1. In a small bowl, whisk together olive oil, apple vinegar, Dijon mustard, and honey for the dressing.
  2. Place drained chickpeas in a large bowl and add 2–3 tablespoons of the dressing. Mix gently and set aside to marinate.
  3. Chop iceberg and romaine lettuces finely and transfer them to a large salad bowl.
  4. Slice sun-dried tomatoes into thin strips and add them along with the mozzarella to the lettuce.
  5. Pour in the remaining dressing and toss everything until well coated.
