  • 16 ounces grated sharp cheddar cheese
  • 1 cup chopped ripe pecans
  • 16 ounces cream cheese (divided)
  • 1/3 cup mango chutney
  • 5 1/3 ounces spinach (frozen, thawed and squeezed dry)
  • 1/2 medium yellow onion (finely chopped)
  • 1/3 to 1/2 cup mayonnaise
  • Fresh ground pepper and salt to taste

Instructions

  1. Lightly oil a 6-cup pan or springform mold and line with plastic wrap.
  2. In a large bowl, combine cheddar cheese, pecans, onion, mayonnaise, salt, and pepper.
  3. Spread half the cheese mixture into the prepared pan; refrigerate.
  4. In another bowl, blend half of the cream cheese with mango chutney and cayenne until smooth; spread over the chilled layer.
  5. Mix remaining cream cheese with spinach and seasonings; layer on top of chutney mixture.
  6. Finish with the remaining cheddar mixture; smooth out evenly.
  7. Cover and refrigerate for at least 2 hours before serving.
