  • 4 bone-in beef chops (1-inch thick)
  • 4 lemons (juiced)
  • 1/4 cup olive oil
  • 4 cloves garlic (minced)
  • 1/2 tablespoon dried oregano
  • 1/2 tablespoon dried thyme
  • 2 teaspoons salt
  • 1 teaspoon fresh ground black pepper
  • 1 teaspoon dried basil
  • 1/2 pound baby potatoes (quartered)
  • 2 large zucchini (cut into 1/2-inch thick slices)

Instructions

  1. Marinate the beef chops by combining lemon juice, olive oil, minced garlic, oregano, thyme, salt, black pepper, and basil in a mixing bowl. Reserve some marinade and pour the rest over the beef in a Ziploc bag.
  2. Marinate for at least 30 minutes or up to 8 hours.
  3. Preheat the oven to 425°F. Toss quartered potatoes and zucchini with reserved marinade.
  4. Spread vegetables on a baking pan lined with foil or parchment paper, place marinated beef chops on top, and bake for 23-25 minutes until the internal temperature reaches 140°F.
