  • 1 cup unsalted butter (softened)
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 3/4 cup berry juice or water
  • 2 1/2 cups fresh or frozen raspberries
  • 1 tablespoon lemon juice
  • 2 tablespoons clear gel (or cornstarch)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream softened butter and sugar until fluffy. Beat in the egg, vanilla extract, lemon zest, baking powder, salt, and flour until combined.
  3. Spread the dough evenly into a greased 9×13 inch baking dish and bake for about 20 minutes until lightly golden.
  4. For the raspberry filling, mix berry juice (or water), sugar, salt, raspberries, lemon zest, and lemon juice in another bowl.
  5. Dissolve clear gel (or cornstarch) in water and add it to the raspberry mixture.
  6. Pour the filling over the cooled crust and bake again for about 15-20 minutes until set.
  7. Allow to cool completely before cutting into squares.
