  • 3/4 cup flour
  • 1/3 cup softened butter
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/4 cup lemon juice
  • 2 cups diced rhubarb
  • 3 eggs
  • 11/2 tablespoons lemon zest
  • 1 cup sugar
  • 1/2 cup flour

Instructions

  1. Preheat the oven to 350°F. Grease a baking pan with nonstick spray.
  2. In a bowl, mix together flour, softened butter, sugar, and salt to form the crust mixture. Press it evenly into the bottom of the prepared pan and bake for 20 minutes.
  3. Meanwhile, in another bowl, combine lemon juice, half of the diced rhubarb, and eggs. Use an immersion blender to slightly blend.
  4. Stir in remaining diced rhubarb, lemon zest, additional sugar, and flour until well combined.
  5. Pour the filling over the baked crust and return to the oven for another 35 minutes.
  6. Let cool for at least two hours before refrigerating until chilled.
