  • 3 Tablespoons Oil
  • 1 Lb Ground Beef
  • 1 Sweet Onion (chopped)
  • 1 Orange Bell Pepper (seeded, chopped)
  • 3 Garlic Cloves (chopped)
  • 14 oz Can Fire Roasted Diced Tomatoes
  • 1/2 teaspoon Smoked Paprika
  • 1/2 teaspoon Dried Oregano
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • Salt/Pepper (to taste)
  • 1 Small Head Green Cabbage (cored, chopped)
  • 2 Cups Shredded Cheddar/Jack Cheese

Instructions

  1. In a large skillet or Dutch oven, heat the oil over medium-high heat. Add the ground beef, chopped onion, and orange bell pepper. Cook until the beef is browned and the onions are translucent.
  2. Add the chopped garlic to the skillet and sauté for an additional minute until fragrant.
  3. Stir in the fire-roasted diced tomatoes along with smoked paprika, dried oregano, garlic powder, onion powder, salt, and pepper. Mix well before topping with the chopped cabbage.
  4. Cover the skillet or Dutch oven and cook for 15 to 20 minutes or until the cabbage is tender.
  5. Remove the lid and sprinkle shredded cheese over the top of the casserole. Cover again until melted. Serve warm and enjoy!
