  • 2 tsp vanilla extract
  • 3/4 cup unsalted butter for frosting
  • 23 cups powdered sugar
  • 1 tsp vanilla extract for frosting
  • 12 tbsp milk for frosting
  • Lucky Charms cereal for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, whisk together flour, cornstarch, baking soda, and salt.
  3. In another bowl, beat together room temperature butter, granulated sugar, and vegetable oil until light and fluffy.
  4. Add the egg, egg yolk, and vanilla extract; mix until fully combined.
  5. Gradually incorporate the dry ingredients into the wet mixture until a dough forms.
  6. Scoop tablespoon-sized portions onto prepared baking sheets spaced two inches apart.
  7. Bake for 10–12 minutes or until lightly golden around the edges. Cool on a rack.
  8. For frosting: Beat room temperature butter with powdered sugar, vanilla extract, and milk until smooth.
  9. Frost cooled cookies generously and top with Lucky Charms cereal.
