  • 4 Boneless Chicken Breasts (thinly pounded)
  • 4 slices of turkey ham (or chicken ham)
  • 4 slices of Swiss cheese (or Provolone/Gruyère)
  • 1 cup all-purpose flour (gluten-free option available)
  • 2 eggs (or plant-based milk)
  • 1 cup Panko breadcrumbs
  • 1/4 cup olive oil
  • For the creamy sauce: 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • salt and pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pound chicken breasts until even in thickness.
  3. Layer each breast with turkey ham and cheese.
  4. Prepare three bowls: one for seasoned flour, one for beaten eggs, and one for Panko breadcrumbs.
  5. Coat each chicken breast in flour, dip in egg, and then coat with Panko.
  6. Heat olive oil in a frying pan over medium heat and fry each side until golden brown (about 5 minutes per side).
  7. Transfer to a baking sheet and bake for an additional 20 minutes until fully cooked.
  8. While baking, mix creamy sauce ingredients until smooth.
  9. Serve chicken drizzled with creamy sauce.
