  • 2 medium Sweet Potatoes (~1.5 lbs)
  • 1 lb Brussels Sprouts
  • 1 cup Brown or Wild Rice
  • 1/4 teaspoon Cinnamon
  • 1 teaspoon Fresh Rosemary
  • Chopped Pecans (Optional)
  • Dried Cranberries (Optional)
  • Fresh Parsley

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine maple syrup, Dijon mustard, olive oil, salt, and pepper; whisk until well blended.
  3. Marinate chicken in the mixture while preparing the vegetables.
  4. Toss sweet potato cubes with olive oil, salt, pepper, cinnamon, and rosemary on a baking sheet.
  5. Roast sweet potatoes for 15 minutes before adding marinated chicken and halved Brussels sprouts to the sheet.
  6. Continue roasting for an additional 15-20 minutes until cooked through.
  7. Cook brown or wild rice according to package instructions.
