  • 3 tbsp maple syrup
  • 2 tbsp grainy mustard
  • 1 tbsp Dijon mustard
  • 1 tsp lemon juice
  • ½ tsp kosher salt
  • ¼ tsp pepper

Instructions

  1. Prepare the glaze by melting the butter in a small saucepan over medium heat. Stir in maple syrup, grainy mustard, Dijon mustard, lemon juice, kosher salt, and pepper. Whisk until combined.
  2. Preheat the oven to 400°F (200°C). Peel the carrots and trim off their tops.
  3. Arrange the carrots on a baking sheet, drizzle most of the glaze over them (reserve some for later), and toss to coat evenly.
  4. Roast the carrots for 30 to 35 minutes, stirring occasionally to prevent burning. Cover with foil if they darken too quickly.
