  • ¾ pound boneless skinless chicken breasts
  • 8 ounces fusilli or penne pasta
  • ½ tablespoon olive oil
  • 1½ tablespoons unsalted butter
  • 2 cloves garlic (minced)
  • 1½ tablespoons flour
  • 1 cup heavy cream
  • â…“ cup reserved pasta water (from the cooked pasta)
  • ½ teaspoon Italian seasoning
  • ½ cup freshly grated parmesan cheese
  • ½ cup sun-dried tomatoes (chopped)
  • salt and freshly ground black pepper (to taste)

Instructions

  1. Cook the pasta in boiling salted water until al dente; reserve some pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper and sauté until golden brown; remove and set aside.
  3. In the same skillet, melt butter and sauté garlic until fragrant. Whisk in flour, then gradually add heavy cream while whisking to avoid lumps.
  4. Stir in reserved pasta water and Italian seasoning. Return chicken to the skillet along with sun-dried tomatoes and parmesan cheese; mix until heated through.
