  • 3 lb potatoes (peeled and cut into chunks)
  • 1 cup Colby – Monterey Jack cheese (shredded)
  • 1/4 cup Parmesan cheese (grated)
  • 1/2 cup milk
  • 1/2 stick unsalted butter (melted)
  • 2 tbsp green onion (chopped)
  • 1/2 tsp onion powder
  • 1 tsp salt (or to taste)
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp white pepper
  • 23 tbsp Colby – Monterey Jack cheese (grated)
  • 1 tbsp green onion (chopped)
  • sour cream

Instructions

  1. Boil the potatoes in salted water for about 15 minutes or until tender. Drain and mash.
  2. Preheat your oven to 350°F.
  3. In a mixing bowl, combine the mashed potatoes with cheeses, milk, butter, green onions, onion powder, salt, and peppers until well mixed.
  4. Grease a muffin tin and fill each cup evenly with the potato mixture.
  5. Top each cup with additional cheese and bake for about 20 minutes until golden brown.
  6. Let cool slightly before serving; top with chopped green onions or sour cream if desired.
