  • 16 ounces orzo pasta
  • 1 yellow or red pepper (diced)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup kalamata olives (chopped)
  • 1 cup fresh spinach (finely chopped)
  • 1/2 cup fresh basil (finely chopped)
  • 1/2 cup feta crumbles
  • 1/2 cup extra virgin olive oil
  • 1/2 cup balsamic vinegar
  • Salt & pepper (to taste)

Instructions

  1. Cook the orzo pasta according to package directions. Rinse with cold water and drain.
  2. In a large bowl, combine cooked orzo with diced pepper, halved tomatoes, chopped olives, spinach, basil, and feta. Season with salt and pepper.
  3. In a separate bowl, whisk together olive oil and balsamic vinegar. Pour over the salad mixture and stir well.
  4. Cover and chill in the refrigerator for at least 30 minutes before serving.
