  • 1 pound ground beef
  • 1 medium yellow onion (diced)
  • 2 teaspoons minced garlic
  • ¼ cup taco seasoning
  • ½ cup water
  • 14.5 oz. diced tomatoes (fire roasted, do not drain)
  • 4 oz. can green chiles
  • 15 oz. can black beans (drained and rinsed)
  • 18 corn tortillas
  • 6 cups shredded cheese (jack and cheddar)
  • 12 tomatoes (diced for garnish)
  • 1 green onion (sliced for garnish)
  • Sour cream for serving

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Spray a 9×13 casserole dish with non-stick cooking spray and set it aside.
  2. In a large skillet over medium heat, cook ground beef and onion until browned and softened. Add minced garlic and sauté for an additional 1–2 minutes.
  3. Add taco seasoning and water, stirring over medium heat until everything is well combined.
  4. Stir in diced tomatoes (with juices), green chiles, and black beans. Heat through until warm.
  5. Line the prepared baking dish with six corn tortillas, overlapping slightly. Spread one-third of the meat mixture over the tortillas and sprinkle two cups of shredded cheese over this layer. Repeat twice more, finishing with cheese on top.
  6. Cover with aluminum foil and bake for 30–40 minutes until bubbly and cheese is fully melted. Remove from oven; let sit for about ten minutes before slicing.
  7. Garnish with diced tomatoes and sliced green onions, and serve with sour cream on the side.
