  • 8 ounces yellow potatoes (diced)
  • 1 medium yellow onion (chopped)
  • 1 jalapeno pepper (chopped)
  • 2 cloves garlic (chopped)
  • 1 pound ground beef (or chicken/turkey)
  • 2 large tomatoes (chopped)
  • 3/4 cup beef stock (or chicken/vegetable stock)
  • 1 tablespoon paprika
  • 1 tablespoon Mexican oregano
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced potatoes, onion, and jalapeno; cook for about 5 minutes until softened.
  2. Stir in chopped garlic and ground beef; break up the meat and brown for about 5 minutes.
  3. Add chopped tomatoes, stock, paprika, oregano, cumin, salt, and pepper; mix well and reduce heat to simmer.
  4. Allow to simmer for about 20 minutes until flavors meld and potatoes are tender.
  5. Serve picadillo over rice or with warmed tortillas, garnished with sliced peppers and lime juice.
