  • 1/2 head purple cabbage (shredded)
  • 1 cup shredded carrots (from 12 large carrots or pre-shredded bag from the store)
  • 1/4 red onion (thinly sliced, optional)
  • 1/4 cup fresh cilantro (chopped)
  • 1/4 cup olive oil
  • 3 tablespoons fresh lime juice (from 12 limes)
  • 3 tablespoons orange juice
  • 1 tablespoon hot honey (or regular honey + 1/4 teaspoon cayenne pepper)
  • 1 teaspoon cumin
  • 1/2 teaspoon kosher salt

Instructions

  1. Shred green and purple cabbage if not using pre-packaged coleslaw mix.
  2. In a large mixing bowl, combine shredded cabbages, carrots, red onion (if using), and chopped cilantro.
  3. In a separate bowl, whisk together olive oil, lime juice, orange juice, hot honey, cumin, and kosher salt until blended.
  4. Pour the dressing over the vegetable mixture and toss to coat evenly.
