  • 68 whole jalapenos
  • 2 large ears sweet corn (shucked and sliced off cob)
  • 3 ounces cream cheese (softened)
  • 1/4 cup sour cream (or Greek yogurt)
  • 1/2 cup sharp cheddar cheese (shredded)
  • 1/4 cup cotija cheese
  • Tajin seasoning

Instructions

  1. Preheat your oven to 400°F (200°C) or prepare the grill or air fryer.
  2. Slice jalapenos in half lengthwise and remove seeds.
  3. Sauté sweet corn in a skillet over medium heat for 2–3 minutes. Season with Tajin.
  4. In the same skillet, combine cream cheese, sour cream, cheddar cheese, cumin, and half of the cilantro until melted.
  5. Using a zip-top bag, pipe the cheese mixture into each jalapeno half.
  6. Place stuffed jalapenos on a baking sheet or grill and cook for about 15 minutes or until golden brown.
