- 1 cup salsa verde chicken
- 1–2 Tbsp salsa verde
- 1/4 cup light sour cream
- 1/2 cup shredded sharp cheddar cheese
- 12 street taco corn tortillas
- Cooking spray
- 1/2 tsp cumin
- 1/4 tsp kosher salt
- 1/4 tsp garlic powder
- 1/4 cup chopped green onion (white and light green parts)
- Preheat your air fryer to 400°F.
- In a mixing bowl, combine salsa verde chicken, salsa verde, sour cream, cheddar cheese, cumin, salt, garlic powder, and green onions until well mixed.
- Stack tortillas and wrap in damp paper towels; microwave on High for 25-30 seconds to soften.
- Lay out each tortilla and lightly spray one side with cooking spray. Place the filling on one half of each tortilla and fold over.
- Place folded quesadillas in the air fryer basket without overcrowding. Cook for 4 minutes, flip, then cook for another 4 minutes until golden brown.
- Serve hot with condiments like sour cream or guacamole.
