  • 8 oz ricotta cheese
  • 4 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 tsp lemon zest
  • 2 tsp lemon juice
  • 1/2 cup mini chocolate chips
  • 2 store-bought pie crusts
  • 1 large egg (beaten)
  • 2 Tbsp granulated sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Roll out each pie crust to about 1/8 inch thick and cut circles using a round cutter.
  3. Press each circle into the wells of a muffin tin. Brush with beaten egg and sprinkle with sugar mixed with cinnamon.
  4. Bake for about 10 minutes or until golden brown. Let cool before filling.
  5. In a mixing bowl, combine ricotta cheese and cream cheese until smooth. Mix in powdered sugar, vanilla extract, lemon zest, and lemon juice, then fold in chocolate chips.
  6. Fill each baked cup with the ricotta mixture using a spoon or pastry bag.
  7. Top with extra mini chocolate chips and dust with powdered sugar before serving.
