  • 20 baby bell or cremini mushrooms
  • 2 tablespoons butter
  • 2 garlic cloves (minced)
  • ½ medium onion (finely diced)
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 4 ounces cream cheese (softened)
  • ⅓ cup freshly grated parmesan cheese (grated)
  • ⅓ cup whole pecans (roughly chopped)
  • ¼ cup finely chopped fresh parsley (plus more for garnish)

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking sheet.
  2. Remove mushroom stems, finely chop them, and set aside.
  3. In a skillet over medium heat, melt butter and sauté chopped mushroom stems for about 5 minutes. Add onion, garlic, salt, and pepper; cook until softened.
  4. Transfer mixture to a mixing bowl to cool slightly. Stir in cream cheese, parmesan, chopped parsley, and pecans until well combined.
  5. Generously fill each mushroom cap with the mixture. Sprinkle tops with reserved parmesan and pecans.
  6. Bake for 20-25 minutes until golden brown and tender. Garnish with extra parsley before serving.
