  • 1/2 cup unsalted butter
  • 1/3 cup cocoa powder
  • 1/4 cup sugar
  • 1 large egg
  • 1 3/4 cups graham crumbs
  • 3/4 cup shredded coconut
  • 1/2 cup chopped walnuts
  • 6 tablespoons unsalted butter (softened)
  • 2 tablespoons custard powder (or vanilla pudding mix)
  • 3 tablespoons heavy cream
  • 1 1/22 cups powdered sugar
  • 4 oz semi-sweet chocolate
  • 2 teaspoons oil

Instructions

  1. Prepare an 8×8 or 9×9 inch pan by lining it with parchment paper.
  2. For the base layer, combine melted butter, cocoa powder, sugar, egg, graham crumbs, shredded coconut, and finely chopped walnuts in a mixing bowl. Press firmly into the prepared pan.
  3. In another bowl, beat softened butter, custard powder (or vanilla pudding mix), heavy cream, and powdered sugar until smooth. Spread over the base layer.
  4. Melt semi-sweet chocolate with oil until smooth and pour over the custard layer, spreading evenly.
  5. Chill for at least two hours until firm. Lift out using parchment paper overhang and cut into squares.
