  • 1/3 cup balsamic vinegar
  • 2 tbsp honey
  • 8 oz grape tomatoes
  • 8 oz fresh mozzarella balls
  • 2 tbsp avocado oil
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1 tbsp Dijon mustard
  • Kosher salt
  • Fresh black pepper
  • 2 tbsp finely chopped fresh basil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, honey, minced garlic, Italian seasoning, Dijon mustard, salt, and pepper.
  3. In another bowl, toss halved grape tomatoes with mozzarella balls and basil; season with salt and pepper.
  4. Heat avocado oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper.
  5. Sear chicken for 1-2 minutes per side until golden brown. Pour balsamic sauce over the chicken; let simmer briefly.
  6. Top chicken with tomato-mozzarella mixture; transfer to the oven.
  7. Bake uncovered for 18-23 minutes until chicken is cooked through (165°F internal temperature). Rest before serving.
