  • 23 boneless skinless chicken breasts (diced)
  • 16 oz dried short-cut pasta (like rigatoni)
  • 24 oz marinara sauce
  • 1 cup mozzarella cheese
  • 1/2 cup parmesan cheese
  • 1 medium yellow onion (minced)
  • 3 cloves garlic (minced)
  • Italian seasoning, salt, and pepper

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add diced chicken seasoned with salt, pepper, Italian seasoning, and garlic powder. Cook until nearly cooked through (about 5 minutes). Remove and set aside.
  2. In the same pot, sauté minced onion and garlic until soft and fragrant.
  3. Pour in marinara sauce and fill the jar with water; add to the pot and bring to a boil before simmering.
  4. Stir in cooked chicken and dried pasta. Cover and cook for 10-15 minutes until the pasta is tender.
  5. Mix in parmesan and 1/4 cup mozzarella cheese during cooking.
  6. Sprinkle remaining mozzarella on top; cook uncovered for another few minutes until melted.
