  • 1 pound shrimp (thawed, drained, and patted dry)
  • 2 tablespoons sun-dried tomato oil
  • 8 oz orzo pasta (about 2 cups uncooked)
  • 3 cups low-sodium chicken broth
  • 2 cups baby spinach
  • 1/4 cup heavy cream
  • 1/2 cup parmesan cheese
  • 1 teaspoon smoked paprika
  • 4 cloves garlic (minced)
  • 1/4 teaspoon crushed red chili pepper flake
  • 1 teaspoon Italian seasoning
  • kosher salt
  • freshly ground black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter

Instructions

  1. In a large skillet, heat sun-dried tomato oil over medium heat. Season shrimp with salt, pepper, and smoked paprika. Sauté until pink and cooked through, then set aside.
  2. In the same skillet, melt butter and sauté garlic and red pepper flake for about two minutes. Add chicken broth, heavy cream, sun-dried tomatoes, orzo, Italian seasoning, salt, and pepper; bring to a simmer.
  3. Cover and cook for about 10 minutes until orzo is tender. Stir in spinach and parmesan until melted. Add shrimp back to the pan before serving.
