  • 810 slices chicken (cut into ½ pieces)
  • 1 pound spaghetti
  • 3 cloves garlic (minced)
  • 2 large eggs
  • 4 large egg yolks
  • ½ teaspoon salt
  • 1 teaspoon ground black pepper
  • ½ cup heavy cream
  • 1¼ cups finely grated Parmesan cheese
  • 1 cup frozen peas
  • Fresh parsley (for garnish)

Instructions

  1. Preheat a large skillet over medium heat and cook chicken until browned. Remove from heat and drain excess fat, keeping a tablespoon of drippings.
  2. Boil water in a large pot with salt. Cook spaghetti until al dente, about one minute less than package instructions.
  3. In a bowl, whisk together eggs, egg yolks, cream, salt, pepper, and Parmesan cheese.
  4. Sauté garlic in reserved chicken drippings for about 30 seconds until fragrant.
  5. Add peas and cook until thawed, about 2-3 minutes.
  6. Drain spaghetti and add to the skillet with peas and garlic. Pour in the carbonara sauce mixture while tossing to combine.
  7. Let rest for a few minutes to thicken before serving with parsley and additional cheese.
