  • 1 pound chicken breast (cubed)
  • 1 cup pineapple (cubed)
  • 1 tablespoon olive oil
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 red bell pepper (diced)
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger (grated)
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until golden brown and fully cooked. Remove from the skillet and set aside.
  2. In the same skillet, add chopped onion, minced garlic, and diced red bell pepper. Sauté until softened.
  3. Add cubed pineapple to the skillet and cook for about 2 minutes until slightly caramelized.
  4. Stir in jasmine rice along with chicken broth, soy sauce, grated ginger, salt, and pepper. Bring to a boil; then reduce heat to low, cover, and simmer for 18–20 minutes until rice is fully cooked.
  5. Return the cooked chicken to the skillet, mixing well to distribute flavors evenly. Heat through for about 2 minutes.
  6. Serve garnished with sliced green onions and sesame seeds.
