  • 2 pounds boneless skinless chicken breast, cubed
  • 3 cups fresh pineapple, cubed
  • 2 large or 3 small bell peppers, cut into pieces
  • 1 large red onion, cut into pieces
  • 2 tablespoons olive oil, plus additional as needed for brushing the grill
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • â…“ cup reduced sodium soy sauce, or tamari for gluten-free
  • â…“ cup canned pineapple juice, 100% juice
  • â…“ cup ketchup
  • ¼ cup packed dark brown sugar
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons sesame oil
  • 2 teaspoons minced garlic
  • 2 teaspoons grated or minced fresh ginger root
  • ¼ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper, or to taste
  • 1 tablespoon water
  • 1 teaspoon cornstarch

Instructions

  1. In a mixing bowl, whisk together soy sauce, pineapple juice, ketchup, dark brown sugar, olive oil, sesame oil, minced garlic, grated ginger, water, cornstarch, salt, and pepper.
  2. Add cubed chicken to the marinade and coat evenly. Cover and refrigerate for at least 30 minutes.
  3. Preheat grill to medium-high heat or broil in the oven. Brush grill grates with olive oil.
  4. Thread marinated chicken onto skewers with pineapple chunks and vegetable pieces.
  5. Grill kabobs for approximately 10 minutes total, turning occasionally until chicken is cooked through.
  6. Allow to rest before serving; drizzle with extra marinade if desired.
