  • 2 tsp vegetable oil
  • 1/2 tsp salt
  • 1 tsp pepper
  • 1 red bell pepper (cut into 1-inch pieces)
  • 1 cup pineapple chunks (fresh or canned)
  • 1 Tbsp minced garlic
  • 1/2 tsp ground ginger
  • 1/2 cup pineapple juice
  • 1/3 cup soy sauce
  • 1/3 cup chicken broth
  • 1/4 cup hoisin sauce
  • 1/4 cup brown sugar
  • 2 tsp cornstarch
  • 1 Tbsp sesame seeds
  • 2 green onions (sliced)

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Season chicken with salt and pepper; cook for 4-6 minutes until fully cooked.
  2. Add red bell pepper and pineapple chunks; cook for an additional 3-5 minutes until the pepper is tender.
  3. In a mixing bowl, combine pineapple juice, soy sauce, chicken broth, hoisin sauce, brown sugar, minced garlic, ground ginger, and cornstarch. Whisk until well combined.
  4. Pour the sauce mixture into the skillet with the chicken; bring to a low simmer for about 1-2 minutes until thickened.
  5. Remove from heat and serve topped with sesame seeds and sliced green onions.
