  • 1/2 cup white sugar
  • 2 tablespoons cinnamon
  • 1 yellow cake mix
  • 2 (3.5 ounce) boxes of instant pistachio pudding mix (dry)
  • 4 eggs
  • 1/4 cup vegetable oil
  • 1/8 cup water
  • 1 cup sour cream
  • 1 teaspoon green food coloring (optional)
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 3 tablespoons milk
  • 1 1/2 cups powdered sugar
  • 1/2 cup chopped shelled pistachios

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two bread pans.
  2. Combine white sugar and cinnamon in a small bowl.
  3. Coat the bottom and sides of each loaf pan with the cinnamon sugar mixture.
  4. In a medium bowl, mix together yellow cake mix, pistachio pudding mixes, eggs, vegetable oil, water, and sour cream until smooth.
  5. Optionally add green food coloring for enhanced color.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for about 45 minutes or until a toothpick inserted comes out clean.
  8. Let cool in pans for 5 minutes before transferring to a wire rack to cool completely.
  9. For icing, whisk together vanilla extract, almond extract, and milk; gradually add powdered sugar until smooth.
  10. Pour icing over cooled loaves and top with chopped pistachios.
