  • 1/2 cup full fat cream cheese, room temperature
  • 1 1/2 cups granulated sugar
  • 1 large egg, room temperature
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 Tbsp cornstarch
  • 1/2 tsp baking powder
  • 1/2 tsp fine salt
  • 1 cup unsalted butter, room temperature (for frosting)
  • 1 Tbsp vanilla extract (for frosting)
  • 1/2 tsp fine salt (for frosting)
  • 3 1/2 cups powdered sugar (for frosting)
  • 1/4 cup heavy whipping cream, room temperature
  • 1 cup coarse sanding sugar (for decoration)
  • 30 large chocolate chips (for decoration)
  • Round black sprinkles (for decoration)
  • Round red or pink sprinkles (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together unsalted butter and cream cheese until smooth. Gradually add granulated sugar until fluffy, then beat in the egg and vanilla extract.
  3. In another bowl, whisk together all-purpose flour, cornstarch, baking powder, and salt. Gradually mix the dry ingredients into the wet mixture until fully combined.
  4. Scoop about one tablespoon of dough onto prepared baking sheets, spacing them two inches apart. Bake for 14 minutes or until lightly golden around the edges. Cool on a wire rack.
  5. For the buttercream frosting, beat softened unsalted butter until creamy, then gradually add powdered sugar alternating with heavy whipping cream. Mix in vanilla extract and salt until light and fluffy.
  6. Once cooled, frost each cookie and decorate with chocolate chips for eyes and sprinkles as desired.
