  • 400 g floury potatoes (for mashing)
  • 1 egg yolk
  • 550 g small potatoes (for rose petals)
  • 3 tbsp olive oil (plus extra for greasing)
  • Pinch of salt and pepper

Instructions

  1. Peel and dice the floury potatoes, then boil in salted water for 15-20 minutes until soft. Drain and mash; mix in the egg yolk and set aside.
  2. Thinly slice the small potatoes (2-3 mm thick) and toss with olive oil, salt, and pepper.
  3. Preheat the oven to 180°C (350°F) and grease a muffin tin.
  4. Fill each muffin hole with mashed potatoes, then roll overlapping slices of small potatoes into rose shapes and place them on top.
  5. Bake for about 45 minutes until golden brown.
