  • 3 garlic cloves (minced)
  • 1 celery stalk (finely chopped)
  • 4 cups diced pumpkin (with skin, seeded like hokkaido pumpkin/red kuri squash)
  • 1 small or ½ large fennel bulb (trimmed and diced)
  • 1.5 pounds ground beef
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 1 tsp dried marjoram
  • 1 tsp smoked paprika
  • ½ tsp chili flakes
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 ¾ cups beef broth (or chicken or vegetable broth)
  • 1 bay leaf
  • 3 cups puréed tomatoes
  • 1 tbsp tomato paste
  • Fresh thyme (for serving)
  • Chili flakes (for serving)
  • 5 tbsp ricotta
  • 1 tbsp olive oil
  • 1 tbsp grated parmesan
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

  1. In a heavy-based saucepan, heat olive oil over medium-low heat. Add shallots, garlic, and celery; sauté until softened (about 5 minutes).
  2. Stir in diced pumpkin and fennel; cook for another 8 minutes until fragrant.
  3. Increase heat to high, add ground beef, breaking it up as it cooks until browned (about 10 minutes).
  4. Season the mixture with thyme, sage, marjoram, smoked paprika, salt, and pepper. Pour in the beef broth and add a bay leaf; let simmer for approximately 10 minutes.
  5. Stir in puréed tomatoes and tomato paste; cover and simmer for an additional 10 minutes until the pumpkin is tender.
  6. Meanwhile, cook pasta according to package instructions until al dente.
  7. Serve pasta topped with the bolognese sauce, garnishing with ricotta cheese and fresh thyme.
