Ingredients

Scale
  • 45 cups all-purpose flour, divided
  • 1/3 cup (65g) granulated sugar
  • 4 1/2 tsp instant yeast (2 packets)
  • 1 tbsp pumpkin pie spice
  • 1 tsp kosher salt
  • 1 cup (240g) whole milk
  • 1/4 cup (55g) unsalted butter, sliced
  • 1/2 cup (115g) canned pumpkin puree
  • 1 large egg
  • 1/4 cup (55g) unsalted butter, room temp
  • 1/4 cup (58g) canned pumpkin
  • 2/3 cup (135g) light brown sugar, packed
  • 1 1/2 tbsp ground cinnamon
  • 1/4 cup (55g) unsalted butter, room temp
  • 4 oz cream cheese, room temp
  • 1 cup (100g) powdered sugar
  • 1 tsp vanilla bean paste (or vanilla extract)

Instructions

  1. Warm the milk until lukewarm. In a large mixing bowl or stand mixer, combine 2 cups of flour, sugar, yeast, pumpkin pie spice, and salt.
  2. Add the warm milk and butter to the mixture; blend well. Incorporate pumpkin puree and egg, then gradually mix in remaining flour until it forms a soft dough.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in an oiled bowl, cover, and let rise for about 1 hour until doubled in size.
  4. Roll out the dough into a rectangle about ¼ inch thick. Spread softened butter over it, then sprinkle brown sugar mixed with cinnamon and pumpkin pie spice.
  5. Roll up tightly into a log and slice into equal pieces (about 2 inches wide). Arrange in a greased baking dish.
  6. Let rolls rise again for 30 minutes while preheating oven to 350°F (175°C). Bake for about 20 minutes until golden brown.
  7. For frosting, beat together softened butter and cream cheese until creamy; add powdered sugar and vanilla bean paste.
  8. Let rolls cool slightly before frosting generously.
