  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 24 oz cream cheese (softened)
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin pie spice

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a greased 9×13 inch baking pan.
  3. Bake for about 10 minutes until lightly golden. Remove from oven.
  4. In another bowl, beat softened cream cheese until smooth. Gradually add remaining sugar and mix well.
  5. Add eggs one at a time, mixing well after each addition. Stir in pumpkin puree, vanilla extract, pumpkin pie spice until combined.
  6. Pour filling over the pre-baked crust and bake for approximately 30-35 minutes until set but still slightly jiggly in the center.
  7. Turn off oven and let bars cool inside for an hour before refrigerating for at least 4 hours.
