  • 2 tbsp unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream softened butter with granulated and brown sugars until light and fluffy.
  3. Mix in pumpkin puree, egg yolk, and vanilla until combined.
  4. In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, cloves, and salt.
  5. Gradually mix dry ingredients into wet mixture until just combined.
  6. Drop dough by tablespoon onto prepared sheets with space between each cookie.
  7. Bake for 10–12 minutes until edges are set; let cool on the sheet for 5 minutes before transferring to wire racks.
  8. For the frosting: Beat cream cheese and softened butter until smooth; add powdered sugar and vanilla while mixing until fluffy.
  9. Frost cooled cookies generously before serving.
