  • 3/4 cup sugar
  • 2 1/4 cups milk
  • 6 eggs

  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 2 tsp orange zest

Instructions

  1. Preheat your oven to 350°F (180°C) and grease a 9×13 inch baking dish.
  2. In the greased dish, combine diced rhubarb and cubed bread evenly.
  3. In a mixing bowl, whisk together melted butter or oil, sugar, milk, eggs, cinnamon, vanilla, salt, and orange zest until well blended.
  4. Pour the custard mixture over the bread and rhubarb evenly. Ensure all pieces are soaked well.
  5. Cover with plastic wrap or foil and let it rest for at least one hour or overnight in the refrigerator.
  6. Bake for 50–60 minutes or until a knife inserted in the center comes out clean.
  7. Allow to cool for 10 minutes before serving.
