  • 2 salmon filets (46 oz each)
  • ½ lb asparagus (trimmed)
  • 1 lb baby potatoes (quartered)
  • 3 tbsp olive oil
  • ½ tbsp dijon mustard
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • Salt and pepper, to taste
  • Juice of 1 lemon

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix garlic powder, onion powder, paprika, and salt. Set aside.
  3. Toss quartered baby potatoes with 2 tablespoons of olive oil and half of the seasoning mix. Spread on one side of the baking sheet.
  4. Bake potatoes for about 8 minutes.
  5. Meanwhile, brush salmon filets with dijon mustard and season with salt and pepper.
  6. After 8 minutes, add salmon filets and asparagus to the baking sheet. Drizzle remaining olive oil and sprinkle with leftover seasoning.
  7. Bake everything for another 15-20 minutes until potatoes are fork-tender and salmon is cooked through.
