  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 pound fresh salmon fillet, skin removed
  • 4 cups fresh spinach, washed and roughly chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Boil salted water in a large pot. Add pasta and cook according to package instructions until al dente (about 8-10 minutes). Reserve about 1 cup of pasta water, then drain.
  2. Season salmon with salt, pepper, and lemon juice. In a skillet over medium heat, heat olive oil and cook salmon for about 4-5 minutes on each side until fully cooked. Flake into bite-sized pieces.
  3. In the same skillet, sauté garlic until fragrant. Add spinach and cook until wilted (2-3 minutes). Reduce heat to low, stir in heavy cream, then add Parmesan gradually until melted.
  4. Mix in lemon zest, lemon juice, red pepper flakes (if using), salt, and pepper. Add drained pasta and flaked salmon; toss gently to combine.
  5. Adjust consistency with reserved pasta water if needed. Serve hot and garnish with chopped parsley.
