  • 2 large carrots (peeled and finely diced)
  • 1 rib celery (sliced)
  • 2 smoked sausages (turkey or chicken, halved lengthwise and sliced)
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • ¼ teaspoon dried thyme
  • ⅛ teaspoon black pepper
  • 4 cups low sodium chicken broth
  • lbs potatoes (about 6 medium, peeled and diced)
  • 2 cups finely chopped kale
  • ¼½ cup cream (optional)
  • Freshly grated Parmesan cheese (for garnish)

Instructions

  1. Heat canola oil in a skillet over medium-high heat. Add diced onion, carrots, celery, and sliced sausage; cook until onions are softened.
  2. Stir in minced garlic, salt, dried thyme, and black pepper; cook for 1 minute until fragrant.
  3. Pour in low sodium chicken broth and add diced potatoes. Bring to a simmer, cover, and reduce heat to medium. Cook for 15-20 minutes until potatoes are tender.
  4. Stir in chopped kale and optional cream; heat through before serving. Top each bowl with grated Parmesan cheese.
