Ingredients

  • Olive oil (or avocado oil)
  • Garlic
  • Ginger
  • Shallot (or onion)
  • Ground beef (or ground turkey/chicken)
  • Carrot (or grated zucchini)
  • Tamari (or soy sauce)
  • Green onions (or chives)
  • Cabbage leaves
  • Sugar-free maple syrup (or erythritol/stevia)
  • Lime juice

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and ginger; sauté until fragrant.
  2. Stir in chopped shallots and ground beef; cook until browned. Add grated carrot and cook for an additional 2 minutes.
  3. Mix in tamari, green onions, cilantro, and sugar-free maple syrup; stir well to combine.
  4. Blanch cabbage leaves in boiling water for about 2 minutes until softened; cool slightly.
  5. Place 2 tablespoons of filling on each cabbage leaf, fold in sides, and roll tightly.
  6. In the same skillet, add remaining tamari, toasted sesame oil, lime juice, and a splash of water. Arrange rolls seam-side down; cover and simmer for about 15 minutes until heated through.
