  • 1½ lb boneless, skinless chicken breasts
  • 3 bell peppers (mixed colors)
  • 1 medium onion
  • 2 Tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp fine sea salt
  • ½ tsp freshly ground black pepper
  • 8 small flour or corn tortillas
  • Lime wedges
  • Fresh cilantro leaves
  • Optional: sour cream, pico de gallo, guacamole, shredded cheese

Instructions

  1. Preheat the oven to 425°F.
  2. In a bowl, mix chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. On a sheet pan, spread sliced bell peppers and onion with chicken strips. Drizzle with olive oil and sprinkle seasoning mix over everything; toss gently.
  4. Bake for 18-20 minutes until chicken is cooked through (165°F) and edges are charred.
  5. Warm tortillas in foil during the last 5 minutes of baking.
