  • 1 pound shrimp (peeled, deveined, chopped)
  • ½ cup red and green bell pepper (finely chopped)
  • ½ cup onion (finely diced)
  • 2 cloves garlic (minced)
  • 2 cups Monterey Jack cheese (shredded)
  • 1 ½ cups chicken broth
  • ¾1 cup sour cream
  • ¼ cup green enchilada sauce

Instructions

  1. Preheat the oven to 350°F (175°C) and spray a baking dish with cooking spray.
  2. In a large skillet, melt butter over medium heat and sauté bell peppers and onions for about 3-5 minutes until softened. Add garlic and cook for another 30 seconds.
  3. Add shrimp to the skillet and cook for about 2-3 minutes until they begin turning pink. Stir in cilantro, salt, cumin, and chili powder; set aside.
  4. In the same skillet, melt more butter and add flour, cooking for 1-2 minutes before gradually whisking in chicken broth until thickened. Lower heat and mix in sour cream, chilies, and enchilada sauce.
  5. Combine one cup of the sauce with the shrimp mixture. Fill each tortilla with about â…“ cup of this mixture, roll tightly, and place seam side down in the baking dish.
  6. Pour remaining sauce over the tortillas, sprinkle with cheese, and bake for 20-30 minutes until bubbly.
