- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 1 tbsp Italian seasoning
- 2 tsp beef or chicken bouillon
- 1/2 tsp salt
- 4 cups broth (chicken or veggie)
- 1/4 cup cornstarch dissolved in 1/4 cup water
- 36 oz evaporated milk or half-and-half
- 1 cup milk (plus more as needed)
- 12 oz packet cheese tortellini (fresh or dried)
- 5 cups baby spinach
- In your slow cooker, combine browned ground meat with chopped onion, carrots, celery, garlic, broth, and seasonings.
- Cook on low for 7-8 hours or high for 4 hours until the veggies are tender.
- Add evaporated milk and whisk in cornstarch slurry to thicken the soup.
- Stir in the tortellini and cook on high for an additional 45 minutes until tender.
- Add baby spinach just before serving to maintain its vibrant color and nutrients.
