  • 1 lb ground chicken (or turkey/beef)
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1 tbsp Italian seasoning
  • 2 tsp beef or chicken bouillon
  • 1/2 tsp salt
  • 4 cups broth (chicken or veggie)
  • 1/4 cup cornstarch dissolved in 1/4 cup water
  • 36 oz evaporated milk or half-and-half
  • 1 cup milk (plus more as needed)
  • 12 oz packet cheese tortellini (fresh or dried)
  • 5 cups baby spinach

Instructions

  1. In your slow cooker, combine browned ground meat with chopped onion, carrots, celery, garlic, broth, and seasonings.
  2. Cook on low for 7-8 hours or high for 4 hours until the veggies are tender.
  3. Add evaporated milk and whisk in cornstarch slurry to thicken the soup.
  4. Stir in the tortellini and cook on high for an additional 45 minutes until tender.
  5. Add baby spinach just before serving to maintain its vibrant color and nutrients.
